Eunice Armstrong Einkauf, 100, passed away on January 2, 2026, at her home in Houston, Texas, after a brief illness.  She was born on June 20, 1925, in Melfort, Saskatchewan, Canada, to Minnie Josephine Hansen Armstrong and Meynell Benson Armstrong.

Eunice came to Texas from Canada in the late 1940's and lived in San Antonio for many years.  There, she met her husband Oscar, and they married in 1952, moving to Houston soon after.  She was a proud naturalized Texan and an avid sports fan.

Eunice loved to paint, knit, crochet, and read.  She was always positive, and she deeply loved her friends, children, grandchildren, and great-grandchildren.

Eunice was preceded in death by her parents, sister (Merle Gilbert) and by her husband of 59 years Oscar E. Einkauf, Jr. of Houston, Texas.

Eunice is survived by: her sons, Oscar E. Einkauf III & wife Connie of Plano, Texas and Robert B. Einkauf & wife Carol of Houston, Texas; grandchildren, Kaitlin Einkauf of Plano, Texas, Charles Einkauf & wife Kim of McKinney, Texas, Jane Einkauf Townsend & husband Brian of Cypress, Texas, Ben Einkauf & wife Michelle of Houston, Texas and Stephen Einkauf of Cypress, Texas; and great-granddaughters, Claire Townsend, Abigail Townsend, Ariana Einkauf and Elayna Einkauf.

A graveside service will be held at 1:30 p.m. on Saturday, January 10, 2026, at the Hallettsville City Cemetery, 1483 Cemetery Road, Hallettsville, Texas 77964. In lieu of flowers, memorial contributions may be made to Pines Presbyterian Church, 12751 Kimberley Lane, Houston, Texas, 77024.
